Because the cherries are not completely de-pulped, some golden, honey-like sweet mucilage is left on the beans in the drying, process, which leads to rich, smooth taste with complex, fruity and nutty flavors with hints of pecan, pine nuts, honey, chocolate, butter and oolong tea. Mild acidity. Pleasant after taste of dark chocolate. Meli is the Hawaiian word for honey.
